The Best French Dish to Make at Home

Missing the French mountains this year, or just looking forward to your next holiday? French cuisine is something special, and on days when you’re really missing the mountains, why not recreate Alpine flavours at home? Below is a great dish to cook when you’re craving a taste of the Alps.

French cuisine is often called the most famous in the world. At one end you have haute cuisine, led by celebrated chefs; at the other, the everyday cuisine de bonne femme—fresh, simple, honest food from the home kitchen.

Tartiflette

Tartiflette is a relative newcomer, created in the 1980s when producers looked for a delicious way to showcase Reblochon, a classic Alpine cheese. Its success was instant, and today you’ll find tartiflette on menus across the French Alps. It’s the perfect dish to bring a little winter-sports spirit to your table at home.

How to Make Tartiflette

Total time: 1 hour. This recipe serves 6 people.

What you need:

2 kg waxy potatoes (preferably French ‘Ratte potatoes’)
25 g butter
2 onions, finely chopped
200 g smoked bacon, cut into small cubes
200 ml crème fraîche
1 clove of garlic, crushed
500 g Reblochon (French cheese)
Ovenproof dish (3-litre capacity), greased

Preparation:

Peel the potatoes, wash and cut them into thin slices. Pre-boil the potato slices in water with salt for 5 minutes and let them drain. Preheat the oven to 200°C. Heat the butter in a large frying pan and fry the onion until golden. Add the bacon and cook for another 5 minutes. Then add the potato slices and fry for a few more minutes. Then add the crème fraîche and mix well. Season with freshly ground pepper and garlic. Spoon the potato mixture into an ovenproof dish. Cut the Reblochon in half lengthwise and place the two halves, rind-side up, on top of the potatoes. Place the dish in the oven and bake the tartiflette for 20–25 minutes, until the cheese has completely melted away from the rind. Remove the rinds and let the tartiflette bake for another 10 minutes, until the top has turned a nice golden brown.
